The drive behind SAITO SUSHI Cph stems from sushi chef Takashi Saito’s passion for making experimental sushi of high quality.
Takashi Saito strives to make sushi closer to the sushi one gets in Japan rather than what’s popular in Denmark. He does so by using traditional Japanese techniques on Danish ingredients, incorporating traditional Japanese flavors and experimenting with textures and mouthfeel. After years of working in different restaurants in Copenhagen, Takashi is now developing his own voice and making his own style of food.
